Cucumber and Sprouts Salad

This is a wonderful salad and has been one of my breakfast items on many days from almost 10 years. This salad is rich in protein and very simple to make. This can be eaten as evening snack as well. I have mentioned its health benefits at the end of this post.

Ingredients

1 small size cucumber
10 big fist green gram sprouts
Freshly grated coconut 1 cup
1 small lemon
Salt and pepper (optional)

Method of preparation:

Wash sprouts and soak in drinking water over night.



Wash soaked green gram around 8 to 10 times to remove the smell and place it in the sprout box and leave it for 8 to 10 hours. Alternatively you can use cloth to tie the gram. This will also give out good sprouts.


Keep grated raw coconut, lemon, cucumber and sprouts ready.


 
Wash cucumber well and grate it. You can even cut it into small pieces, but I prefer to grate it so that the salad will be juicy and easy to eat.



Mix sprouts, grated coconut, grated cucumber and lemon and your salad is ready. Eat within half an hour for best result.

Note:
Salt and pepper are optional because pepper is an ayurvedic medicine (medicine to be consumed as needed only) and salt is harmful for health, so I prefer to skip it whenever possible. I have been eating without salt from many years, believe me once I got used to it, it is not at all difficult. It will be very juicy because of grated cucumber and lemon.

  3. Kills lethargy and keeps the mind and body alert.
  4. Lemon is rich in vitamin C and helps in boosting immune system.
  5. Rich in protein, consumed with couple of fruits and dry fruits it takes care of complete morning nutritional needs of the body.
