Cucumber and Sprouts Salad This is a wonderful salad and has been one of my breakfast items on many days from almost 10 years. This salad is rich in protein and very simple to make. This can be eaten as evening snack as well. I have mentioned its health benefits at the end of this post. Ingredients 1 small size cucumber 10 big fist green gram sprouts Freshly grated coconut 1 cup 1 small lemon Salt and pepper (optional) Method of preparation: Wash sprouts and soak in drinking water over night. Wash soaked green gram around 8 to 10 times to remove the smell and place it in the sprout box and leave it for 8 to 10 hours. Alternatively you can use cloth to tie the gram. I am blessed to be born in India with an endless taste for food. Except for non-vegetarian food I have tasted wide variety of food preparations which includes the styles of South India like Udupi, Mysore, Mandya, North Karnataka, Tamil Nadu, Andhra Pradesh, Kerala and some of North Indian, few of Chinese and Italian too.. I used to have a great appetite 8 to 10 years back. With age it has diminished a bit, but still I appreciate and enjoy wide variety of preparations in smaller quantities.
